Botanicals
70cl Neutral Grain Spirit 50%vol
300ml distilled water
Juniper Berries - 3g
Coriander Seed - 1g
Cubeb - 0.3g
Mountain Ash Berries - 0.4g
Galangal Root - 0.3g
Cardamom - 0.2g
Star Anise - 0.1g
Step I
Weigh out the juniper and other botanicals then grind roughly in a pestle and mortar. Ensure that the skins are broken on all the juniper berries.
Step 2
Place the ground botanicals into the heating pot of a copper alembic still and add the Neutral Grain Spirit.
Step 3
Connect the swan neck of the still to the heating pot and connect the condenser. Apply heat and collect the gin distillate into a parrot head measure.
Step 4
Remove the first 4ml of heads and discard. Collect the distillate hearts until the abv in the parrot head drops to 76% abv.
Step 5
Bottle the distillate and add the distilled water.
Step 6
Shake well before corking and finishing.
