A classic dry gin with a hint of cucumber and rose.
Pink Dog Gin
70cl Neutral Grain Spirit 50%vol
300ml distilled water
Juniper Berries - 3g
Rose Petals - 1g
Coriander Seed - 0.5g
Cucumber 3 - slices
Ginger - 0.3g
Dandelion Root - 0.4g
Copper Star Rose Oil
Decant the distilled water into a container with 3 slices of cucumber. Weigh out the juniper and other botanicals then grind roughly in a pestle and mortar. Ensure that the skins are broken on all the juniper berries.
Place the ground botanicals into the heating pot of a copper alembic still and add the Neutral Grain Spirit.
Connect the swan neck of the still to the heating pot and connect the condenser. Apply heat and collect the gin distillate into a parrot head measure.
Remove the first 4ml of heads and discard. Collect the distillate hearts until the abv in the parrot head drops to 76% abv.
Bottle the distillate and use a fine filter to strain out the cucumber from the distilled water before adding it to the distillate.
Shake well before corking and finishing.
